Honeygar Lamb encrusted w/ Crushed Macadamias
REDUCTION:
1/2 cup
Earthbound Red Wine Honeygar
1/2 cup lemon juice
Simmer rapidly for 30 min until thickened. Set aside.
COATING:
1 1/4 cups crushed macadamia nuts
1/2 cup flat leaf parsley
2 Tbsp thyme leaves finely chopped
4 cloves garlic crushed
2 Tbsp
Earthbound Manuka honey
Combine in blender.

Lamb Chops or Racks
Salt & Pepper
Season lamb with salt and pepper. Sear all sides in a hot pan.
Transfer to oven dish and roast for 10 min. Remove from oven and
cover with macadamia and herb coating. Roast until crust is golden
(approx 7-9min). Let rest from 10 min.
Reheat honeygar and lemon juice while lamb is resting. Drizzle onto
plates. Place lamb on top. Serve with salad and new potatoes.
