Macadamia Nut Cake
INGREDIENTS:
2 cups brown sugar
2 tsp baking powder
2 Cups flour
225g butter
1 cup milk
1 tsp baking soda
1 egg beaten
1 large tsp ginger
½ Cup roughly chopped macadamia nuts + extra for the topping
Toffee Icing
5 tablespoons each, brown sugar and cream
2 tablespoons butter
DIRECTIONS:
To make the cake: In the food processor, mix
brown sugar, baking powder, flour and butter into crumbs.
Sprinkle half into a greased cake tin.
Heat milk (in a largish glass jug as it froths up a lot). Add
baking soda and when it stops frothing add the egg and ginger and
mix with remaining crumb mixture.
Pour on top of crumb base in tin, sprinkle nuts over the top.
Bake at 180 degrees for about an hour then stand for five minutes
before removing from the tin.
To make the icing: Boil cream, sugar and butter
for exactly five minutes. Spread over cake and sprinkle with extra
chopped nuts.
