Macadamia Nut Christmas Cake
INGREDIENTS
125g extra light margarine, at room temperature\
1/3 cup brown sugar
2 tsp grated orange rind
2 eggs
500g mixed dried fruit
3/4 cup wholemeal flour
1/2 cup plain flour
1 tsp baking soda
2 tsp mixed spice
50g slivered almonds
1/4 cup water
125g macadamia nuts, halved
DIRECTIONS
Lightly grease and line the cake tin. Preheat oven to 180c. Use
an electric beater to beat butter, sugar and rind until combined.
Add eggs and combine. Add flours, fruit, baking soda, mixed spice,
almonds and water. Stir well until all combined. Scrape mixture
into cake tin. Place macadamia nuts on top, lightly pressing onto
the cake mixture. Bake for 40 minutes or until a skewer inserted in
the middle comes out clean. Leave cake to cool before removing
from cake tin.
